A classic 8-row northern flint originating with the Abenaki tribes of northern New England and Quebec, the variety consists of 8-10” single color ears in a color mix of mostly yellow\/gold \u0026amp; red, with some less common orange. Passed on to farmers Roy and Ruth Fair of Callais, VT who put their own stamp of genetic selection on the corn, it eventually found its way to seedsman Tom Stearns who brought it to the commercial marketplace. Our stock originally came from Anthony and Carol Boutard, of Ayers Creek Farm in Gaston, OR, who had been stewarding it as an important market crop for their farm for over a decade, selecting for long slender ears, regular 8-row kernel organization, and a higher portion of the recessive red ears, as they show superior cool soil emergence and earlier ripening. Roy’s makes a flavorful cornmeal, and is great for hominy, or a toothsome posole. Historically famous, this variety, or a very closely related one, was the one corn that survived the 1816 “Year Without a Summer” in northern Vermont, a year that brought a foot of snow on June 7th and killing frosts every month of the year. They belong to a class of cucurbits, including the perhaps better known \"Armenian cucumber,\" which are botanically melons but are eaten immature, at which point they taste (and are used) very similar to cucumbers. The cultivation of Caroselli and other \"cucumber-melons\" predates true cucumbers in the Mediterranean region, and many countries have versions that date back to antiquity. They come in a diversity of shapes and colors: round, elongated, ribbed, striped, fuzzy or smooth, light or dark green. Many are specific to the small geographic area they come from, and a couple are listed with Slow Food's \"Ark of Taste\". This particular variety is known as Leccese Light Green, named after the historic city of Lecce, one of the most important population centers in the region, from where it comes. Plump, light green, cylindrical fruits are refreshingly crisp with a flavor not too dissimilar from a classic cucumber but with a finer, almost-but-not-quite summer squash-like texture, thinner skin, and perhaps slight undertones of its melon family kin. Carosello evangelist Jay Tracy of the \u003ca href=\"https:\/\/cucumbershop.com\/\"\u003eCucumber Shop\u003c\/a\u003e in Fairfield, CA, shared this strain with us. Somewhat of a compulsion, really. It might be my favorite thing to grow, full stop. We don't even sell it from our farm really, yet some years I pretend 1000 row ft is a perfectly reasonable amount to put in. You know, for um... personal use(?). And it's not like it's easy to grow, not like you can be flip about it. It's in the ground for 4 months. Then you have to dig them up from the cold wet late fall\/early winter field, bring them inside, and grow them some more... in bins, or indoor shallow lagoons, in darkness for another couple of weeks. If you are a lover of plant form or just a lover of exquisite beauty, the result will take your breath away. I'll be honest, Rosa di Gorizia could taste like liver and onions and I would likely still do all that work to grow it. That it is a delicious bite, with a subtle and refreshing bitterness and delicate crispness makes me feel like plants love me in a way I might not deserve.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThis type of radicchio is grown around the town of Gorizia which straddles the border of Slovenia in the northeast corner of Italy, in the foothills of the alps. Originally it was grown because it represented one of the only ways to make income on farms in the winter from vegetable growing, but it has since become a celebrated seasonal specialty and culinary delicacy.\u003c\/p\u003e\n\u003cp\u003eWhen we first started working with Smarties.bio we weren't going to bring in their Goriziana as we already have one we grow ourselves, 'Isontina'. However, we've grown quite fond of theirs. 'Voglia' is a little more robust, if you will, a little thicker leaf and sturdier ribbing. Its leaf margins tend to be lightly serrated and there is often a color contrast between the top and bottom of the leaf, which makes for a very elegant look. It is very uniform in shape and very cold hardy. While Isontina is a bit more delicate and variable in shape, sometimes more orchid than rose after forcing, 'Voglia' is very much rose. It also seems less affected by rot or decay in the forcing room.\u003c\/p\u003e\n\u003cp\u003eAs with all radicchio, be especially mindful of your planting dates as a successful crop requires a MUCH narrower planting window than most garden vegetables. Like many of the pale to gold radicchi, its bitterness is in the background and its texture most akin to lettuce family greens with a tender crisp crunch (think iceberg meets romaine for an after-dinner amaro). Its a beautiful addition to salads shredded raw and we'll always recommend grilled wedges for just about any of the radicchio types. For most vegetables, in order to provide a continuous harvest over a long period of time, growers stagger planting dates throughout the season which in turn provides a continuous harvest as the plants mature to eating stage. With radicchio, a different strategy is employed. For the most part, the majority of heading radicchio is best suited to seeding around the summer solstice (transplanting in the second-third week of July). To achieve a longer harvest period, rather than staggering planting dates, breeders have developed different varieties within a type with different days-to-maturity harvests.
