Za'atar Oregano


(Origanum syriacum) Za'atar is the wild oregano of the Levant, used in the eponymous seasoning mix of the same name (with sumac, thyme, ground, sesame, salt etc). A wild plant often growing in rocky, hilly soils from Egypt to Jordan, it is central to the cuisine and culture of the area. The flavor is a warming and pungent melange of oregano, marjoram, and thyme notes. An evergreen, tender perennial it prefers well-draining soil and doesn't love wet feet combined with freezing temps. In very cold, wet areas, it can easily be grown as an annual. We find it to be fast growing and a wonderful addition to our kitchen herb garden, used to season flatbreads and vegetables, and crushed in olive oil, makes a lovely dip for bread.
